We shine light on an employee with over 40 years of experience.

To inaugurate the Community Spotlight, we're proud to feature one of our own. Jean Herfindahl has been a hard-working employee with Schweigert™ meats since October 3, 1969. Today, because of her positive attitude, strong work ethic and infectious personality, she continues to be a tremendous inspiration to her coworkers as well as her family and friends.

Jean is the kind of person anyone would be lucky to know. And so that everyone can have that chance, we asked her a few questions about life, work and community. Read on for her answers and discover one of the many amazing people who help us bring you the local Schweigert™ meats your family loves.

Schweigert: What achievement in life are you most proud of?

Jean: That would be my two boys, Brian, age 36, and Brad, age 33, for turning out so good when I was a working mother.

Schweigert: Who has been your greatest inspiration in life?

Jean: My mother.

Schweigert: Do you have any hobbies?

Jean: I'm in a bowling league that bowls every Tuesday, and I have a 135 average. But it's nothing serious, just a lot of fun and laughs.

I also enjoy watching my grandsons in sports like hockey, baseball, tennis, wrestling and football.

Schweigert: What's your favorite thing about living in Albert Lea?

Jean: It's close to work.

Schweigert: What's your favorite Schweigert™ brand product?

Jean: I would have to say Buffalo Wings, because that's the line I work on. My second choice would be the Tenders, because there are so many ways you can use them - in a wrap or a salad, cut up in gravy made with cream of chicken soup, over mashed potatoes or just by themselves dipped in barbeque or ranch sauce.

Schweigert: What's one of your favorite family memories?

Jean: That would be up north at our cabin with my four grandsons and the rest of the family, roasting hot dogs or brats over the campfire.

Schweigert: What's your best memory from work?

Jean: It's really hard to have just one memory, but the different people I have met over the years, young and old, made the lasting memories.

This is a good hot dish I would make years ago when my boys were in hockey. I would take it to all of the potlucks during the season.
Ingredients

1 box (16 oz.) large shell macaroni
2 cans (28 oz. each) diced tomatoes
1 pkg. (16 oz.) shredded mozzarella cheese
1 pkg. (16 oz.) Schweigert™ Smoked Brats
1 pkg. (16 oz.) Schweigert™ Polish Sausage

Instructions

Slice the brats and polish sausage about 1/4-inch thick. Mix together in bowl, set aside. Boil macaroni for about 6 minutes so it is still chewy. Then rinse and drain. Use a 5 qt. casserole dish and start with about one-fourth of the macaroni. Spread on bottom of dish, sprinkle in about one fourth of the brats and polish sausage pieces. Pour 2 cups of diced tomatoes with juice over meat and sprinkle on a cup of shredded cheese. Repeat until you have used all the ingredients, making sure the cheese ends up on the very top. Bake 45 minutes at 350 degrees or until it starts to bubble.
